Most independent venues are watching sales closely and their cost lines loosely. Labour drifts above roster targets during quiet shifts, stock gets ordered on habit rather than actual usage, and small leakage in COGS goes unnoticed until it shows up in the P&L months later.
I come at this from the floor, not a spreadsheet. Years managing large-format retail and hospitality sites means the recommendations are things a duty manager can actually run on a Saturday night, not a theory that only works on paper. Every engagement ends with a written action plan, not a slide deck.
